Chocolate Cream Cheese Frosting

Hands down the best chocolate frosting we’ve ever had!

It’s IZ’s birthday.(Happy Birthday, IZ!! And now that we’re the same again again, would you please stop telling people that I robbed the cradle?). Since it is his birthday, I spent the day baking his favorite cake. The frosting is out of this world good. Rich, decadent, addictive. Totally not on the diet plan. But you know, you only turn 42 once, at least officially.

Heather asked on twitter if I’d put up the recipe so here it is.

I hope y’all have an amazing weekend! I will, amongst other things, be working off cake! Happy Friday!

Chocolate Cream Cheese Frosting

16 oz cream cheese

1/2 cup butter (room temp)

2 ts vanilla

4 cups powdered sugar

12 oz semi-sweet chocolate (I use Ghiradelli chocolate chips)

Melt chocolate, stir until smooth, and set aside to cool.  In a mixer, whip butter and cream cheese until soft and smooth. Add vanilla and powder sugar (one cup at a time). Add cooled chocolate and mix until well incorporated. Refrigerate for 15 minutes before frosting your cake. I like to rewhip my frosting before using it.

Makes enough to frost a 3 layer 9″ cake. About 5 cups. If you need less the recipe can be easily cut in half.  Please note, any cake frosted with this frosting should be refrigerated until served. I get my cake out of the refrigerator about 20 minutes before serving.

The frosting sounds like something I would adore!! Was the cake chocolate too? Happy Birthday to IZ. Love your raspberry decorations too–aren’t the raspberries good this year?

Oh, no! I’m a day late – Happy Birthday, IZ!

And Wen, you’re killing me with this one. Question: will people judge me if I don’t take the time to bake a cake to put it on first? Seriously, I’ll be lucky if I tie a tea towel around my neck before I take the entire mixing bowl to the sofa with a spoon…. 🙂

Considering how much of this frosting I consumed while making it, who am I to judge? I will say, that once you refrigerate it, it becomes a bit truffle like. 😀
